Line 2 baking sheets with parchment paper. In a large bowl, mix peanut butter and syrup with a spatula till fully combined. Then mix in the oat flour, and then the rice cereal. Stir very well.
Form smooth balls with your hands using 1 1/2 tablespoons of the peanut butter mixture and place them on the parchment paper. Repeat till you have used all the mixture. You should have around 33 balls. Then place baking sheets in the fridge for at least 10 minutes.
Meanwhile heat the chocolate in a double broiler over medium heat. Stir till melted and reduce heat to low. Let the chocolate cool for a few minutes before you dip the balls. Once it has cooled enough, dip and roll peanut butter balls in the melted chocolate to cover them. Then transfer balls back to parchment paper. Repeat till all the balls are coated in chocolate. Then place the pans back in the fridge for at least 20 minutes. Store in tupperwares in the fridge and enjoy!
